What’s the best chicken salad sandwich recipe that was ever made for a picnic?

Of all chicken sandwiches recipes, I think this first one is my personal favourite. That’s maybe because I adore avocado and often use it instead of butter in sandwiches or just on toast as a snack.

I also love spicy foods so I choose spicy refried beans as well as jalapenos but you could use the unspicy version.

These are recipes for 2 people for substantial sandwich ideas:

Mexican chicken roll

  • 2 (6-inch) sandwich rolls (such as submarine rolls), halved
  • 8 oz cooked chicken breast, sliced
  • 1 ripe avocado
  • a good squeeze of lemon or lime juice
  • 1 cup shredded iceberg or romaine lettuce
  • 1 tomato, sliced
  • half a cup of spicy refried beans or other mashed beans such as black beans
  • a few pickled green jalapeno pepper slices (from a jar)
  • salt and pepper to taste

Cut lengthwise around the middle of the avocado, twist it to separate halves and remove the stone. Scoop out flesh with a spoon and mash it with the lemon juice in a small bowl.

Spread mashed avocado on cut sides of rolls, dividing evenly. Sprinkle withsalt and pepper. On bottom halves, layer sliced chicken, lettuce, tomato, bean mash and jalapeño pepper slices.

Put both halves together and wrap well in cling film/wrap. Do not leave too long before eating or the avocado will go black and look unappetizing – the lemon juice should prevent this for a few hours but this is not one of the chicken sandwich recipes to make the night before your picnic.

Neither is this one – but it’s a very tasty chicken salad sandwich recipe!

Chicken ‘n’ cheese baguette

  • Two 6-7 inch French baguettes
  • 2 small skinless, boneless, cooked chicken breasts
  • 6 rashers of crisp streaky bacon
  • 1 avocado, peeled, seeded and sliced
  • 12 small, crisp, lettuce leaves
  • 2 oz soft cream cheese
  • 3 tablespoons mayonnaise
  • 2 oz gorgonzola or other blue cheese, softened

Combine the cheeses and mayo until mixed well.

Split the baguettes horizontally and spread the inside of each with the cheese mixture.

Slice the chicken and layer with the avo, bacon and lettuce on bottom half of baguette. Put the top on, wrap and take to a picnic the same day.

Fruity chicken croissant

Here is another chicken salad sandwich filling, which I’ve been told is nice in large croissants. Like other recipes on this page, the quantity is enough for 2.

  • 2 cups cubed cooked chicken
  • 1/2 cup dried tart cherries (I think you could also use dried cranberries)
  • 3 green (spring) onions, sliced
  • 1/2 cup mayonnaise
  • 1/4 cup plain yogurt
  • 1 tablespoon lemon juice
  • Freshly ground black pepper, to taste

Combine chicken, cherries and onions in a large bowl and mix well.

In another bowl, combine mayonnaise, yogurt, lemon juice and pepper. Pour this over the chicken mixture. Mix gently. Then cover and refrigerate for an hour or so.

Take to the picnic in a cooler and spoon onto sliced croissants; top with lettuce and parsley if you like.

Lemon and herb chicken sandwich

This recipe is even better when made with Herby Chicken breasts and makes a substantial chicken salad sandwich recipe for 2 people. This filling is good in multi-grain bread or large multi-grain rolls.

  • 2 cooked chicken breasts, diced
  • 2 tablespoons mayonnaise
  • 2 tablespoons plain yogurt
  • 1/2 tablespoon chopped fresh dill
  • 1/4 teaspoon grated lemon zest
  • 1 teaspoons lemon juice
  • salt to taste
  • 4 lettuce leaves

Combine mayonnaise, yogurt, dill, lemon zest, lemon juice and salt in a medium-size bowl. Add chicken pieces. Toss with dressing. Place lettuce leaves on buttered bread or in rolls and fill with chicken mixture. Wrap.

Here are some more chicken salad sandwich recipe filling ideas to work with. You can also think up your own ideas using cooked chicken and mayo (or cream cheese if it’s going to be very hot and sunny) and add some kind of crunchy texture to make them more interesting. Try bean sprouts, crisp bacon, celery, nuts, seeds, sweetcorn kernels or slices of apple, red pepper etc.

  • spread bread with peanut butter and add cooked chicken, crisp lettuce and onion
  • add curry powder to mayo to taste and mix with diced cooked chicken and a few sultanas or fat raisins. Butter bread and line with lettuce before adding mixture.
  • sliced chicken and celery with cranberry sauce in soft buttered rolls
  • sliced chicken, grated carrot, red onion, bean sprouts and a sprinkle of mixed seeds with mayo or your favourite dressing in a pita pocket
  • rye bread spread with parsley butter, sliced chicken and tomato, chopped capers
  • soft bread spread with cream cheese and filled with cooked chicken and sweetcorn
  • chopped cooked chicken mixed with mayo, soy sauce, a teaspoon of grated fresh ginger and fresh coriander (cilantro) leaves.
