Chicken Soup
Make chicken or turkey soup with Christmas left-overs
If you want to make a quick and easy chicken soup, or turkey soup, with some left-over scraps, then this is the one!
Lovely and smooth and warming in a flask for a winter picnic,
this recipe goes down a treat because it has a really strong chicken flavour.
It has quite a lot of butter in it so it isn't exactly low-fat! However it's the butter which gives it the lovely smooth texture. On a cold winter's day, you'll soon burn off the calories anyway.
- 60 grams butter
- 35 grams plain flour
- 900 ml chicken or turkey stock
- 300 ml milk
- a couple of handfuls of chopped up, cooked,chicken or turkey scraps
- a handful of chopped parsley
- salt and pepper to taste
Melt the butter in a saucepan and add the flour. Keep stirring and cook over a medium heat for about 3 minutes.
Remove from the heat and add the stock and milk slowing, stirring all the time so that no lumps form. If you prefer you may use a whisk for this.
Put back on the heat and bring to the boil. Then simmer gently for a few minutes.
Add the cooked chicken or turkey scraps and the parsley. Adjust the seasoning to taste and reheat before pouring it all into your picnic flask.
