The addition of Pomegranate seeds turn a few simple ingredients into a Christmas salad with the tap of a spoon! Hint: to extract the seeds easily from a halved pomegranate, just hit the skin side hard with a spoon while holding the fruit over a bowl. Pick out any bits of pith that fall in as that’s bitter and you don’t want to include it. Be careful of your clothes because the seeds STAIN
Mix the pomegranate seeds with the red onion, olive oil and wine vinegar and leave for half an hour. After half an hour, break up the cheese into bite-sized pieces and add to the mixture. Tear up the chicory leaves and add to the bowl with the mint leaves. Combine everything gently. Happy Christmas!
