Put a stunning Christmas salad on your picnic table
Add a festive touch to create sensational salads
A Christmas salad such as this looks as if it could be hung from your Christmas tree! The pomegranate seeds look like sparkling jewels and the mix of flavour and texture is spectacular too.
Hint: to extract the seeds easily from a halved pomegranate, just hit the skin side hard with a spoon while holding the fruit over a bowl. Pick out any bits of pith that fall in as that’s bitter and you don’t want to include it.
Be careful of your clothes because the seeds STAIN
Ingredients:
seeds from 2 halved pomegranates (or in the UK you can now buy packets of the seeds in the chiller cabinets of some supermarkets)
1 red onion, finely diced
3 tablespoons of olive oil
2 tablespoons of red wine vinegar
200 grams of crumbly goat’s or Feta cheese
2 heads of chicory (one red and one white if possible)
a handful of fresh mint leaves
freshly milled black pepper (check if you need salt as the cheese could add salt enough)
Mix the pomegranate seeds with the red onion, olive oil and wine vinegar and leave for half an hour, or traveling time.
After half an hour, or when you are ready to serve, break up the cheese into bite-sized pieces and add to the mixture. Tear up the chicory leaves and add to the bowl with the mint leaves. Combine everything gently and serve.
If you mix this too early the mint leaves will turn soggy and unappetising.
