Fennel coleslaw

For fennel coleslaw take:
1 bulb of fennel, halved and sliced thinly
1 medium carrot grated
1 stick celery sliced thinly
1 green apple, cored and thinly sliced
2-3 teaspoons of creamed horseradish
150 grams of natural yoghurt
To make the coleslaw, mix the yoghurt and horseradish in a bowl and then add the fennel, carrot, celery and apple.
Mix and store in a covered container in a cool place until ready to serve.
If you have fennel and celery fronds on the vegetables, these are also nice, chopped and added or used for decoration.
This is a great coleslaw to serve with a spicy fish, meat or chicken recipe. It mixes well with flavours such as cumin and coriander.
