This easy fish soup has happy memories for me. Many years ago, while I was in the middle of making it, my husband called home and asked me what I was cooking for dinner. However, I got a very negative response when I told him! Nevertheless, I continued making it and, later on that evening, he asked for seconds. Nowadays he eats a lot more fish than he used to and we remember that night as the beginning of his “fish eating education”! I will be truthful now and tell you that, although I’ve made it many times since, we have not yet taken it on a picnic. There is no reason why you shouldn’t however, so here it is!
Heat the olive oil in a large, heavy saucepan and add the diced potato and garlic. Cook over a gentle heat for about 5 minutes, stirring all the time because the potato tends to stick. Add the fish stock, fish, tinned chopped tomatoes and lemon juice. Simmer gently for 15 minutes and sprinkle in the chopped herbs just before serving or pouring into your picnic flask. Yum – I hope you enjoy it as much as my husband does now!
