Flapjacks

Crunchy or chewy?
which do you prefer?

Flapjacks must be one of the U.K.'s favourite coffee or teatime treats. As these sweet oat biscuits are easy to make and transport, they are also ideal for picnics.

Fully cooked, they are crisp and crunchy but if you prefer them chewy, just cook for a little less time.

For about 20, you'll need:

  • 2 tablespoons of golden syrup
  • 175 grams of butter
  • 150 grams of Demerara sugar
  • 300 grams of porridge oats
  • a pinch of mixed spice or ground ginger (optional)
  • a pinch of salt
  • sesame seeds to sprinkle on top (optional)

Melt the butter and golden syrup slowly in a saucepan. Mix the sugar, oats, spice and salt in a separate bowl.

Then mix all these ingredients together - either the melted mixture into the dry or the other way about, whichever suits you.

Tip into a greased baking tin of approx. 20 x 30 cms. Sprinkle with sesame seeds if using.

Bake in a pre-heated oven of 180 degrees C or Gas 4 for 25 - 30 minutes, until golden.

Leave to cool in the tin for a few minutes and then cut into squares or fingers. Finish cooling on a rack.

When completely cold, store in an airtight tin or wrap individually in cling film to take to the picnic.
