Halloumi cheese is a favourite in my family at barbecue
time.
A very dear (and sadly now departed) friend introduced us to it many years ago. She had eaten it on Cyprus, well before it was ever imported into the U.K.
You've guessed. It's a Greek cheese. A very mild one.
You can find it in cheese shops and supermarkets, preserved in brine.
The chewy texture makes your teeth squeak!
This is an easy starter, which can be eaten in the fingers (once cooled a little!) or with knives and forks if you want to be more formal.
Cubes of the cheese can also be threaded onto skewers with vegetables, before grilling on the BBQ. This makes a tasty, easy and healthy choice for vegetarians.
