- Greek Halloumi

Halloumi cheese is a favourite in my family at barbecue time. A very dear (and sadly now departed) friend introduced us to it many years ago. She had eaten it on Cyprus, well before it was ever imported into the U.K.

You've guessed. It's a Greek cheese. A very mild one.

You can find it in cheese shops and supermarkets, preserved in brine.

Dry it on kitchen paper and slice into fairly thick slices. Then simply barbecue on each side until golden. Over hot embers this will only take a minute or two.

Serve with lemon to squeeze over the griddled cheese, which counteracts any saltiness.

This is an easy starter, which can be eaten in the fingers (once cooled a little!) or with knives and forks if you want to be more formal.

Cubes of the cheese can also be threaded onto skewers with vegetables, before grilling on the BBQ. This makes a tasty, easy and healthy choice for vegetarians.
