Hester the hen

We like to take my mum's macaroons on a picnic. She makes great ones! They're nice with fruit salad or anything really.

The picture is one of our hens. She's called Hester. We use her eggs to make these macaroons and lots of other things!

They're easy to bake and easier to pack than meringues.

Here's my mum's recipe:

2 egg whites
125g ground almonds
175g caster sugar
2 tablespoons cornflour
1 teaspoon of almond essence

Preheat oven to 160 degrees C. Use non-stick baking sheets or line two trays with non-stick paper.

Whisk the egg whites in a large bowl for a couple of minutes until frothy - not stiff.

Stir in the other ingredients and mix.

Place spoonfuls of mixture on the baking sheets and allow a bit of room between each because they spread.

Bake for 15-20 minutes or until a gold colour. Take off the sheet and cool before storing in an airtight tin.
