Spicy Thai Pork Burgers

Lemongrass and fish sauce
for exotic flavour



These are delicious pork burgers with an exotic spicy flavour. They are good served in a bun with lime mayonnaise – just mix some fresh lime juice into mayonnaise. Cabbage coleslaw goes well with them too.

700 grams of minced pork
3 large spring onions
2 large cloves garlic
the bottom 4 inches of a stalk of lemongrass
half a deseeded red chilli or some chilli paste
225 grams button mushrooms
a tablespoon of Thai fish sauce (I use Barts)
a handful of fresh chopped coriander
a few grinds of black pepper

Put spring onions, garlic, lemongrass and chilli into food processor and blitz to a smooth puree.

Add mushrooms and process until finely chopped. Transfer to a bowl and mix in the fish sauce, pork and coriander. Grind in some black pepper and divide into 6 burgers.

Spray lightly with oil and fry or barbecue until they are cooked through – about 5 minutes per side over a medium heat. Spread lime mayonnaise on the bottom of each bun.

For a quick and easy cabbage coleslaw to serve with these, just dice part of a white cabbage (add a little onion too if you like) and mix with the lime mayonnaise.
