Simple & Delicious Beetroot Salad

You will need:
A casserole dish (or large container)
small bowl
8 hard boiled eggs
8 boiled beetroot
3 boiled large potatoes
olive oil
white vinegar
salt
pepper
You need to:
- slice the beetroot & the eggs & place into the casserole dish
- Chop the potato up & toss in with the beetroot & eggs
- Put roughly 4 tablespoons of olive oil & 2 table spoons of white vinegar into a small bowl & mix (you can add more or less of these ingredients to your liking or even use a shop-bought salad dressing)
- Splash the dressing all over the beetroot, potato & egg & sprinkle with salt & pepper.
You could even:
- Serve in a crusty bread roll with mixed salad leaves.
- Serve as an accompanyment to barbecued chicken or lamb.
- Eat on its own with a floral-white wine
