Turkey burgers





Low calorie burgers
with tons of flavour



I made these turkey burgers again the other night and should have taken a picture of them for you but they had all been gobbled up before I thought about it! Next time I’ll try and get the camera out before they disappear.

I always get 10 out of 10 for these from my husband, so I hope you enjoy them just as much.

This quantity makes 4 healthy turkey burgers – and before you ask, yes sometimes we are greedy and eat 2 each! They are low calorie burgers though!

- 500 grams of fresh turkey mince – or mince some raw turkey breast yourself
- 250 grams of dried apricots (the soft ones that don’t need soaking)
- a small onion (I used a red one plus a very small clove of garlic)
- a teaspoon of mixed dried herbs – or a handful of fresh (sage and parsley are good or coriander)
- an orange
-a 3 cm piece of fresh root ginger - or a dessertspoon of grated ginger from a jar

Chop up the apricots into tiny pieces. Put into a bowl with the dried herbs, zest of the orange (grate the orange or use my favourite tool, a zester), peeled and grated ginger and 2 tablespoons of juice from the orange. Leave to stand for at least 5 minutes.

Dice the onion (and garlic if you’re using) and, in another bowl, mix well with the turkey mince and some salt and pepper to season.

Then stir in the apricot mixture and mix everything well together. Divide this mixture into 4 and shape into turkey burgers.

Wrap in cling film and keep in the fridge until you are ready to pack them in a cool box to transport to your picnic or barbecue site.

Brush the burgers with oil and grill over hot coals until thoroughly cooked. Make sure there is no pink meat whatsoever before you serve them.

I like to serve these turkey burgers with a simple salad of mixed green leaves, sliced tomatoesand some plain yogurt or raita.

If you don't want to serve a yogurt dressing, do make sure you have something moist to go with them (a chutney perhaps) because some people can find them a little on the dry side.

P.S. I made these again on Good Friday for the family but I didn't have an orange so I added a tablespoon of chutney (I used Apricot, Garlic and Ginger chutney) instead, mixed with a few drops of a fruit smoothie I had in the fridge! They were fab! Oh dear - forgot the pic again!
