It’s a Wrap!

Roll up a meal
and eat out!



Tortilla wraps are a doddle to make so take a break from sliced white bread sandwiches and wrap up your picnic lunch.

Jazz up a can of tuna with some mango and a splash of soy sauce or go veggie and roll up beans with salsa and crème fraiche (see our first 2 recipes) or try another of our easy combinations.

Thai tuna

2 tortillas, half a small ripe mango, 2 spring onions, 170 g can of tuna, 3 tablespoons of mayonnaise, 2 tablespoons of fresh chopped basil or coriander, 1 tablespoon of soy sauce, a good splash of lime juice.

Slice the mango and spring onions into long strips. In a bowl mix the mayonnaise, herbs, soy sauce and lime juice and tuna. Divide evenly, spreading down the centre of the tortillas. Cover with mango and onion strips. Roll up and cut in half. Cover in cling film and keep cool.

Tex-Mex

2 tortillas, 75 ml sour cream or crème fraiche, 50 ml chunky tomato salsa, a few (or more according to how hot you like it) shakes of Tabasco, half a teaspoon of ground cumin, 540 ml can black or mixed beans (drained and rinsed), 2 plum tomatoes (chopped), half a small red onion (diced), a handful of chopped iceberg or romaine lettuce.

Stir together the sour cream, salsa, cumin and Tabasco (taste and add more Tabasco if needed). Divide between tortillas and spread down the centre of each. Mound the lettuce over and wrap up the tortilla around the filling. Cut in half and cover in cling film. Keep cool until required.

Caesar chicken

Slice some cooked chicken and scatter over the wraps. Sprinkle with pine nuts (toasted if you have time) and drizzle with Caesar dressing. Top with romaine/cos lettuce and roll up tightly.

Spicy avocado and sweet pepper

Roughly mash 2 ripe, skinned avocados and mix with a small chopped red and a small yellow sweet pepper, 3 salad onions, a red chilli (seeds removed and chopped) and a handful of chopped fresh coriander. Add the juice of a lime and salt and black pepper to taste. Wrap in tortillas. You can also add shredded lettuce and grilled chicken strips or refried beans and sour cream.

Peanut butter and banana

Spread tortilla with crunchy peanut butter and add sliced banana. Dot with strawberry jam if you dare before rolling very carefully!

Smoked salmon

Spread cream cheese over the tortilla and cover with smoked salmon. Sprinkle with diced red onion and capers. Roll.

B.L.T.

Spread mayonnaise over the tortilla. Cover with a few slices of prosciutto or cooked bacon strips, baby spinach and chopped plum tomatoes. Roll.

Pizza

Spread a tomato pasta sauce lightly over a tortilla and cover with slices of pepperoni or chorizo and grated Cheddar. Roll.

Chicken tikka

Spread some mango chutney and raita over the tortilla. Add slices of chicken tikka and cucumber. Roll.

Greek veggie

Spread hummus over a tortilla. Add chopped tomato, cucumber and peppers. Cover with a handful of rocket. Roll.
